It’s the start of August and for the past week the North East has had rain, every day. Naturally on my day off I decided to bake because it makes me happy and I need a break from the computer. After spying on Sarah Kirby, a blog ran by the lovely Sarah, I wanted to try my hand at Oreo Cupcakes. Now Oreo’s have a special place in my heart, they were the first ‘accidentally vegan’ product I found and I was addicted to them (especially the double stuff ones) for the first two months of going vegan. Anyway here’s the recipe:

Vegan Oreo Cupcakes

100g vegan butter

100g caster sugar

1 banana, mashed

75g self raising flour

25g cocoa powder

225g icing sugar

100g vegan butter

4 tsp cocoa powder

1 tsp vanilla extract

5 or 6 Oreos, crumbled


1. Preheat the oven to 200°C. Line a cake tin with paper cases.

2. Cream together the butter and sugar until light and fluffy. Beat in the mashed banana with self raising flour and cocoa powder.

3. Spoon into cases and bake for 10-14 minutes or until a skewer comes out clean.

4. For the frosting, cream butter and icing sugar together. Add the cocoa powder and vanilla extract, mix until it forms a butter consistency.

5. Once the cakes are cool, spread the icing over the cakes and crumble the Oreos  over the cakes.

I do say that these are by far my best vegan bake so far. The cakes tasted delicious and have went down a treat with friends and family! It just shows that you don’t need animal ingredients to make tasty treats.
