Recently I have been craving one of Nando’s Veggie Burgers but anyone following Slimming World will know that they are a lot of syns, so it was time to find a new option that was healthier but just as tasty. Fakeaways is a god send! After reading the burger in a bowl recipe, I decided to recreate my own and I thought I should share the recipe for anyone looking for a vegan friendly but more healthier version burger.


low calorie cooking spray or 1 tbsp oil

1 onion, sliced thinly

2 crushed garlic cloves

half a packet of vegetarian mince

a handful of spinach

pepper, chopped into chunks

cucumber, chopped into chunks

mini plum tomatoes, cut in half

gherkins (optional)

1 tbsp reduced salt and sugar tomato ketchup



1. Spray a large non-stick frying pan with low calorie cooking spray or oil and place over a medium heat. Add the onion and garlic and cook until soft and golden.

2. Stir in the mince and cook over a medium heat until it’s cooked. I learnt that it doesn’t change colour so make sure you see whether it’s browned.

3. Meanwhile, mix together the spinach, peppers, tomatoes, cucumber and gherkins in a bowl. Spoon the vegetarian mince mixture on top and drizzle over 1 tbsp of ketchup.

It tastes super delicious and is a lot like a burger flavour but without the bread and all the syns that you would find in other burgers. It also shows that you can turn more or less any recipe into a vegan friendly choice. It took about 10 minutes to make so for any of those who don’t like standing in front of a cooker for hours on end, this would be a good choice!
